Utsuk is a film about transition in nutrition in Canadian Inuit communities; transition that are related to environmental changes but also socio-economical changes. The film follows a small group of researchers trying to measure how important are the changes in the consumption of this vital resource that allowed Inuit to survive for millennium: marine fat. Meanwhile, the film portray the contemporary lifestyle of those last hunters and gatherers in the world, showing the challenges of preserving this aspect of life which is a big part of Inuit cultural identity. Toward scientific explanations of health benefits of this dietary habit, we learn more about human evolution and the fragile balance between men and his environment.
